Rye Bread
This bread has a distinct taste and tastes very good. This is my friend Tina’s recipe.
Ingredients:
* All purpose flour/ bread flour (sieved) 5 cups
* Rye flour 3 cups
* Active Dry Yeast 2 tbsp
* Honey 3 tbsp
*1/4 c molasses for sweetener
* Water 3.5 cups
* Salt 1 tbsp
* Oil 4 tbsp
Procedure:
1. Warm the water to 115 degrees Fahrenheit.
2. Add the honey.
3. Add the yeast and let it sit till it froths (about 3 minutes).
4. Add the oil and salt.
5. Sieve the bread flour.
6. Mix in the rye flour and water.
6. Knead the dough for 10 minutes (very important) using the liquid concoction prepared above.
7. The dough should come together and have “feel like a baby’s butt” .
8. Cover the dough with thin moist (not dripping wet) cloth. Let it rest for 1 hour.
9. Punch the dough and knead it for 2 minutes. Divide it into 2 equal portions.
10. Shape each into logs and put them in the 4×9 bread pan.
11. Cover again with the moist cloth and let it rest for 30 mins.
12. Bake at 375 degrees for 30 minutes.
Easy whole wheat bread
This bread has a mixture of whole wheat and bread flours.
This is handmade and turned out pretty good.

Ingredients:
* All purpose flour/ bread flour (seived) 5 cups
* Whole wheat flour 3 cups
* Oats (optional) 1/2 cup
* Active Dry Yeast 2 tbsp
* Honey 3 tbsp
* Water 3.5 cups
* Salt 1 tbsp
* Oil 4 tbsp
Procedure:
1. Warm the water to 115 degrees farenheit.
2. Add the honey.
3. Add the yeast and let it sit till it froths (about 3 minutes).
4. Add the oil and salt.
5. Seive the flour.
6. Mix the flours, oats and water.

Ragi (Finger Millet) Bread
Ingredients:

- Ragi flour 1 cup
- Active Dry Yeast 2 tbsp
- Honey 3 tbsp
- Water 3.5 cups
- Salt 1 tbsp
- Oil 4 tbsp
Procedure:
- Warm the water to 115 degrees farenheit.
- Add the honey.
- Add the yeast and let it sit till it froths (about 3 minutes).
- Add the oil and salt.
- Mix the flours.
- Knead the dough for 10 minutes (very important) using the liquid concoction prepared above.

Pizza
For the dough, I used the proportions from this recipe .

Ingredients
For crust
- 2 cups bread flour
- 1 cup warm water (110 degrees F/45 degrees C)
- 2 teaspoons white sugar
- 1 (.25 ounce) package active dry yeast
- 2 tablespoons olive oil
- 1 teaspoon salt
For sauce
- 1 can of diced tomatoes
- Olive oil 2 tbsps
- garlic 3 cloves (or per taste)
- Pepper 1/2 tsp
- Dill 1tsp (optional)
- Salt 1 tsp
For topping
- Grated Cheese 1 and 1/2 cup (I used cheddar)
- Cilantro 1/4 cup
- Onion (thin slices) 1 medium
- Tomato (thin slice) 1
Procedure
Crust:
- Heat the water to 115 degrees farenheit. Add sugar and yeast and let it proof for 5 mins. The liquid mixture will become bubbly.
- Add the salt and oil.
- Gradually add the liquid mixture to the flour and knead it into the dough. Knead for 10 mins.
- Cover with moist cloth and let it rise for 30 mins.
Sauce:
- Blend all the sauce ingredients except the olive oil in a blender.
- Heat oil in the pan on medium for 3 mins and add the blended mixture.
- Cook the blended mixture on medium low for 20 mins (while dough is rising).
- Turn off the heat and let it cool.
Preheat the oven to 350 degrees F.
Assemble:
- Divide the dough into 5 equal portions.
- Roll out each portion in a floured surface to 8 inches in diameter and 6-7 mm thickness.
- Spoon out sauce and spread on the surface liberally
- Spread out the cheese
- Add toppings
I place each assembled pizza on an aluminium sheet and them put them on a cookie sheet as I do not have a pizza stone.
Bake for 17 mins
Basic White Bread (Tinas recipe)

Whole wheat dinner rolls
I stumbled upon Nikki Goldbecks “Cooking What Comes Naturally” at a used book store. The vegetarian menu plans and accompanying recipes in the book and quite helpful. My first attempt was the “whole wheat rolls” which I must say turned out quite well. This brings us a step closer to reducing intake of highly processed ingredients (all purpose flour).

Time of effort: 30 minutes
Time to table 2 hours
Ingredients:
Milk 1 and 1/4 cup
Salt 2 and 1/2 tsp
Honey 1/4 cup
Butter or oil 1/4 cup
Water 1/2 cup
Dry yeast 2 tablespoons
Whole wheat flour 4 cups
Procedure:
1. Heat milk and water to around 120 degrees farenheit. Add the salt, honey, butter/oil and set aside.
2. Mix yeast and flour
3. Add the liquid mixture to the dry mixture gradually and knead for 10 minutes to form a dough. Cover with damp cloth and let it erst for 45 minutes and let it rise. The weather is pretty warm in my region due to which I do not need to do much to get the dough to rise.
4. Grease the pan/sheet in which you plan on baking the bread. Form the dough int0 balls of around 2 and 1/2 inches in diameter and line them up, leaving some 1 inch space between them. Baste with butter. Cover with damp cloth. Let the dough rise for 1 hour.
5. Preheat the oven to 400 degrees farenheit and bake for 15 minutes.
